Vinification: Oxidative; Slow, gentle pressing of the grapes in a traditional Coquard vertical press, followed by a 12 to 24- hour decanting period. CIVC selection of yeasts; Fermentation takes roughly three weeks. Full malolactic.. Vinification is done in small, temperature-controlled stainless steel tanks (25hL, 58hL, 82hL) allowing the origin of each vineyard to be kept separate.
Aging: 2.5 years on lees. Bottled with 8g/L dosage.
