Soil: Granitic and alluvial
Viticulture: natural grass cover to fight against erosion. Treatments limited to the maximum depending on the weather, no insecticide to preserve biodiversity, little fertilizer and only organic. Control of vigor and yields, leaf stripping, green harvest for better grape maturation. Disbudding in spring.
Vinification: plot and traditional vinification. Minimal use of oenological products (indigenous yeasts). In the cellar, sorting, crushing and partial destemming. 3 weeks maceration in open vats.
Aging: 7 months 50% in barrels and 50% in vats. Blending of the different plots before bottling.
