Soil: Terra Rossa: well-drained, reddish, clayey to silty soil with neutral pH conditions. Hematite over goethite.
Farming practices: Organic-practicing. Hand-harvested estate fruit.
Vinification: Crush and destemmed and left on skins for 2 days. Using only the free run juice, the wine was cold settled for 24 hours before ambient fermentation in 200L Slavonian oak foudre for 3 weeks.
Aging: Aged in stainless steel for 3 months on fine lees. Unfined. Minimal SO2.
