Vinification: All of our grapes were harvested and vinified separately at their own optimal ripeness. Each was hand-destemmed and gently macerated at cool temperatures for 4-14 days.
Aging: 8 months in a combination of neutral oak and HDPE tanks at which point the components were blended and bottled without fining, filtering, nor SO2 additions and aged an additional 7 months in bottle before release.
