Farming: Biodyanmic. Hand-harvested estate fruit.
Vinification: The fermentation begins in stainless steel tank and is stopped by lowering the temperature at an alcohol level just over 11% with about 22 grams of residual sugar. The wine is bottled and a second fermentation occurs with no added sugars or yeasts to promote it. There is no dosage and it is therefore a “brut nature.”
Aging: 24 months sur latte (bottles placed on wooden racks on their sides)
