Farming: Sustainably farmed, hand-harvested estate fruit
Vinification: Cold maceration for 4 days before fermentation at 10ºC -12ºC. Alcoholic fermentation in tank at controlled temperatures with 2 to 3 pump-overs per day.
Aging: 50% of the wine was aged in French oak barrels for 12 months.
