Farming: Biodynamic. Hand-harvested estate fruit.
Vinification: 100% Riesling barrel fermented, with 10% whole cluster, and no crushing for 7 days. After. the wine undergoes spontaneous fermentation and is allowed to ferment naturally - 90% in 2,000L Slavonian oak barrels. The wine undergoes an extremely slow natural fermentation, and not starting malolactic fermentation until early the following year (2022).
Aging: 12 months in old slavonian oak
