Vinification: grape clusters are dried in a special larder for three months. Frequent inspections follow throughout the period to ensure proper drying. After they are de-stemmed and fermented in small stainless steel containers with indigenous yeasts.
Aging: Aged in 6-7 year old 20hl French oak foudres
