Farming: Sustainably farmed. Hand-harvested estate fruit.
Vinification: The grapes were coolled before the crushing and imediatly pressed. The resulting juice decanted in stainless steel vats, and then fermented in other stainless steel vat under temperature control, only with the indigenous yeast.
